Pineapple Sheet Cake

Pineapple Sheet Cake

Ingredients:
2 c. flour
2 c. sugar
1 tsp. vanilla
2 eggs, beaten
2 tsp. baking soda
1 (15 1/2 oz.) can crushed pineapple, with juice
1 (8 oz.) package cream cheese
1 c. brown sugar
4 tbsp. shortening
Method:

  • Mix flour, sugar, vanilla, eggs, baking soda, and pineapple (including juice) in a large bowl. 
  • Pour into a greased and floured 13x9x2-inch baking dish. 
  • Bake at 325 degrees for 30 to 35 minutes.
  • For icing, beat cream cheese, brown sugar, and shortening with mixer until smooth.
  •  Spread on cake as soon as it’s removed from the oven.
